Honey New Zealand UMF5+ Manuka Honey the starting point for rating UMF Manuka honey. It has a special biological activity called Unique Manuka Factor (UMF) which relates predominantly to the non-peroxide activity. The presence of the special non-peroxide activity can be detected only by an array of scientific testing directly relating to the phenol standard.
